Ellsworth Creamery Brings Fresh Cheese Curds to Minnesota State Fair

For the first time in its history, Ellsworth Cooperative Creamery will sell its signature fresh cheese curds directly to fairgoers at the Minnesota State Fair. The Wisconsin-based producer, which has long supplied concessionaires with frying curds, will debut exclusive two-ounce pouches at its booth on Underwood Street.

The company’s new "Made Fresh for the Fair" pouches will be available throughout the event, which runs in St. Paul from August 27 to September 7. Attendees can choose from six distinct varieties, including Natural Cheddar, Garlic, Pizza, Jalapeno, Ranch, and Dill Pickle. Each 2oz serving contains 12 grams of protein, positioning the product as a nutrient-dense alternative to traditional midway snacks.

Kevin Pieh, CEO of the cooperative, noted that the move capitalizes on the company’s status as the top-selling refrigerated retail cheese curd brand in the United States. While Ellsworth has served as a behind-the-scenes supplier for deep-fried curds at the fair for years, this sponsorship of the Food Building marks their first direct-to-consumer retail presence on the fairgrounds. The village of Ellsworth, Wisconsin, remains the hub of this production, officially recognized as the "Cheese Curd Capital" for its specialized manufacturing process.
