Global Flavors Take Center Stage at the Grill

As the summer grilling season peaks, the National Pork Board is pushing to move beyond traditional barbecue by highlighting the protein's adaptability for international dishes. From Vietnamese-inspired lemongrass chops to Mediterranean souvlaki, the campaign aims to show how pork functions as a canvas for complex, global flavor profiles.

The shift toward diverse palates is supported by National Restaurant Association data, which indicates that 64% of adults are actively seeking international culinary experiences. By utilizing cuts like chops and skewers, home cooks can replicate restaurant-style Mediterranean, Asian, and Latin dishes without leaving the backyard. The initiative features specific pairings, such as grilled prosciutto with peach pizza and burgers topped with bacon onion jam, to encourage experimentation during the remaining weeks of outdoor cooking.

Mastering these recipes requires attention to the specific physical properties of lean pork. To ensure quality, the board emphasizes that grillers should pull meat from the heat at an internal temperature of 145°F, followed by a mandatory three-minute resting period. Additional technique adjustments, such as applying sugar-based sauces only in the final minutes to avoid charring and using indirect heat to manage flare-ups, are critical for maintaining texture. These guidelines are part of a broader effort by the National Pork Board to provide consumers with the technical literacy needed to handle pork products effectively across various grill setups.
