Managing partners Richard and Michael Emanuele pivoted toward the snacks after Michael developed a specialized cold extrusion technology to shrink traditional ice cream textures into a 60-calorie format. The company currently supplies major retailers including Walmart, Wawa, and Weis, relying on a clean-label strategy that excludes corn syrup and seed oils in favor of Italian chocolate and Pennsylvania dairy.

A 38,000-square-foot facility expansion at MGT Foods’ Fort Monmouth headquarters marks a turning point for the veteran-owned business. The company is scaling up production of its Biti Bites brand to keep pace with nationwide demand for Biteables, the bite-sized, cookie-dough-wrapped ice cream snacks that have surged in popularity since their 2025 debut.

Michael Emanuele maintains that the decision to scale locally in New Jersey was driven by a commitment to ingredient transparency. By moving beyond the prototype stage into a high-capacity manufacturing environment, the family-owned firm aims to solidify its position in the competitive frozen dessert category. The product line now features four distinct varieties, ranging from traditional chocolate chip cookie dough to strawberry shortcake, all produced under the firm’s long-standing infrastructure.
